Leek has a mild onion flavor that it also slightly sweet, and wonderfully savory.  Add leek to any herb, it is great in so many dishes because of it lends an extra depth and flavor to the meal.

 

Be sure to always give them a good rinse before using them. Once the leeks are cleaned and ready to go, trim off and discard the very end of the leeks (the roots).  Then cut off the dark green leaves on top, these add great flavour to vege stocks or broth.  The dark green parts can be frozen and saved for later too.

Then, the pale white and light green parts will be ready to go! 

  • Raw: Like onions, raw leeks have a pretty strong flavor.  But when they are very thinly sliced, they can be a nice garnish for soups, salads, roasted veggies, meats, fishes, or other dishes.  Or you can also mix them into green salads, dips, or salad dressings.
  • Sautéd: —slicing then sautéing them as I would onions for various recipes.  Also, if you sauté them for long enough, leeks will caramelize just like onions.
  • Roasted: This is another great option that helps add big flavor.  You can either roast leeks whole, halved or sliced — so simple, and so delicious!

Storage Tips! Fresh leeks should be stored unwashed and untrimmed in the refrigerator, where they will keep fresh for 1 to 2 weeks. Keeping them in a loosely wrapped plastic/beeswax wrap will help them to retain moisture.
